Prepare Ingredients
Wash and slice
Rinse lettuce leaves and pat dry. Slice the tomato into 1/4-inch thick rounds. Peel and slice the red onion very thin (about 1–2 mm). Set aside on a plate covered with paper towel to absorb excess moisture.
Measure out relish and condiments into small bowls for easy assembly.
Form and Season Patties
Divide the ground beef into two equal portions (about 8 ounces each). Gently form each portion into a patty about 3/4-inch thick and slightly wider than the bun. Do not overwork the meat — handle it lightly so patties remain tender.
Make a shallow dimple in the center of each patty with your thumb — this helps them cook evenly and prevents puffing. Season both sides liberally with kosher salt and freshly ground black pepper. Lightly brush or sprinkle 1 tsp Worcestershire sauce over each patty (optional) for added umami.
Cook Patties
Heat a large skillet or cast-iron pan over medium-high heat until very hot (about 2–3 minutes). Add 1 tablespoon vegetable oil and swirl to coat.
Place patties in the pan leaving space between them. Cook undisturbed for 3–4 minutes to form a brown crust. Flip and cook the second side for 2–3 minutes for medium-rare to medium. For medium-well, cook an additional 1–2 minutes per side. Adjust time to reach desired doneness.
About 60–90 seconds before the patties are done, reduce heat to medium-low and top each patty with your choice of sliced cheese: 1–2 slices cheddar for a sharp finish or 1–2 slices Swiss for a nuttier, milder flavor. Cover the pan with a lid to melt the cheese evenly, about 1 minute.
Remove patties to a plate and tent loosely with foil to rest for 2–3 minutes.
Toast Buns
Assemble Burgers
Spread mayonnaise on the bottom bun (if using). Place a lettuce leaf on the mayo to create a moisture barrier.
Set the cheese-topped patty on the lettuce. Add a tomato slice (season lightly with a pinch of salt if desired) and a few thin rings of red onion.
Spoon 1 tablespoon relish over the onions (adjust to taste). If desired, add a small swipe of ketchup or mustard to the top bun before closing.
Close the burger with the top bun, press gently, and serve immediately.
Serving Suggestion
Serve with fries, potato chips, or a simple green salad. Provide extra relish and condiments on the side.
