Prepare Lime Juice
Juice the limes
Roll about 6–8 medium limes on the counter under your palm to soften them. Cut limes in half and use a handheld or electric citrus juicer to extract juice until you have 1 cup (about 8 ounces). Strain the juice through a fine-mesh sieve into a measuring cup to remove pulp and seeds. Set aside.
Sweeten and Dilute
Dissolve sugar
In a large pitcher, add 3 tablespoons granulated sugar. Pour in about 1/2 cup of the cold water and stir vigorously until the sugar is fully dissolved. If you prefer to use simple syrup instead of granulated sugar, add 2 tablespoons simple syrup and skip this dissolving step.
Combine lime and water
Pour the strained lime juice into the pitcher with the dissolved sugar. Add the remaining 2 1/2 cups cold water, stirring to combine. Taste the limeade and adjust sweetness: add up to 2 tablespoons more simple syrup or 1–2 teaspoons more sugar dissolved in a bit of water if needed. If desired, add a pinch (about 1/4 tsp) of salt to brighten flavors and stir to incorporate.
Chill and Serve
Add 2 cups of ice cubes to the pitcher or pour limeade over ice in individual glasses. If using, bruise the mint leaves lightly between your fingers to release aroma and add to the pitcher or glass. Garnish each glass with a lime slice.
Serve immediately for the freshest flavor, or chill the prepared limeade in the refrigerator for up to 24 hours. Stir before serving if any separation occurs.
