System Setup & Dilution
Chill and prime
Ensure your carbonator reservoir and fountain lines are clean and chilled. Chill carbonated water to 2–4°C (35–40°F) before mixing to maintain carbonation and flavor stability.
Calculate final dilution: Most fountain syrups are formulated to mix at roughly 1 part syrup to 5 parts carbonated water (1:5). The ingredient set above assumes 1 cup (240 ml) syrup yields approximately 1.44 L finished beverage when mixed 1:5. Confirm manufacturer ratio printed on syrup bag or concentrate label and adjust volumes accordingly.
Set CO2 pressure on the carbonator to maintain 20–40 psi depending on system design and beverage desired carbonation level. Higher pressure = more carbonation retention when dispensing cold beverages.
Mixing Individual Fountain Drinks
Cola (per 16 fl oz / ~475 ml cup)
Measure 80 ml cola syrup into a clean dispensing line/blender or mixing container. Add 400 ml chilled carbonated water (1:5 syrup to water). Gently stir once with a sanitized spoon to combine — avoid vigorous stirring that will strip CO2. Taste and adjust: if too sweet, add 25–50 ml chilled carbonated water; if too weak, add up to 10 ml syrup. Pour over 1 cup (120 g) ice in a 16 fl oz cup, garnish with a lemon wedge if desired, and insert straw.
Lemon-Lime (per 16 fl oz / ~475 ml cup)
Measure 80 ml lemon-lime syrup. Add 400 ml chilled carbonated water and gently stir to combine. Pour over ice and garnish with a lime wedge. For a fresher note, gently squeeze the lime wedge into the drink and drop it in.
Root Beer (per 16 fl oz / ~475 ml cup)
Measure 80 ml root beer syrup. Add 400 ml chilled carbonated water and stir gently. Root beer is less acidic; if the foam level is too high when dispensing, reduce agitation and pour slowly. Garnish with a maraschino cherry.
Orange Soda (per 16 fl oz / ~475 ml cup)
Measure 80 ml orange soda syrup. Add 400 ml chilled carbonated water and combine gently. For an orange float, add one scoop (about 60 g) of vanilla ice cream on top after pouring. Garnish with an orange half-wheel or cherry.
Diet Cola (per 16 fl oz / ~475 ml cup)
Measure 80 ml diet cola syrup. Add 400 ml chilled carbonated water and stir gently. Diet formulations can taste slightly different cold; ensure water is well chilled and dispense immediately over ice to maintain mouthfeel.
Service, Maintenance & Scaling
To serve at scale from a multi-flavor fountain head: connect each syrup bag to its designated valve, confirm syrup pump or gravity feed is functioning, and set the dispense ratio on the machine if adjustable. Perform a short flush of lines before starting service to remove standing concentrate or water.
Line cleaning and hygiene: follow manufacturer schedule — typically daily quick rinse of nozzles and weekly hot-water or approved chemical line cleaning. Sanitize nozzles, drip trays, and caps to prevent microbial growth and off-flavors.
Storage: keep unopened syrup bags cool and sealed per supplier guidelines. Opened syrup should be used within the supplier-recommended timeframe (often 30–90 days) and kept refrigerated if required.
Adjusting sweetness/carbonation: for less sweetness, reduce syrup by 10–20% and increase carbonated water proportionally. For more carbonation perception without changing CO2 pressure, serve over less ice and ensure beverages are very cold.
