Cauliflower & Batter

Prep

Separate cauliflower into bite-sized florets (about 1–1½ inch). Pat dry with paper towels to remove surface moisture.

If making vegan: use vegan butter, vegan mayonnaise, plant-based milk + 1 tsp vinegar (for 'buttermilk'), and vegan sour cream or crème fraîche.

Batter & Frying

Make the tempura-style batter

In a medium bowl whisk together flour, cornstarch, tapioca starch (if using), baking powder, salt and pepper. Add cold sparkling water a little at a time and stir gently until just combined; batter should be slightly lumpy and thin enough to coat but not runny (adjust with a tablespoon more water or flour if needed). Keep bowl over an ice bath or add a couple of ice cubes to keep batter cold — this preserves the light, airy texture.

Heat oil

Pour oil into a medium heavy-bottomed pot or deep skillet to a depth of about 1½–2 inches. Heat oil to 350°F (175°C). If you don't have a thermometer, test by dropping a small amount of batter: it should sizzle and rise slowly without darkening immediately.

Working in small batches (4–6 florets at a time), dip cauliflower florets into the batter, letting excess drip off, then carefully lower into the hot oil. Fry, turning occasionally, until golden and crisp, about 3–4 minutes per batch depending on floret size. Do not overcrowd the pot.

Use a slotted spoon to transfer cooked florets to a wire rack set over a baking sheet or to paper towels. Keep them warm in a single layer in a 200°F (95°C) oven while you finish remaining batches.

Buffalo Sauce & Toss

Prepare the buffalo sauce

In a small saucepan over low heat, melt butter (or vegan butter). Stir in hot sauce, maple syrup or honey, apple cider vinegar, garlic powder, smoked paprika and salt. Whisk until combined and slightly warmed through (2–3 minutes). Taste and adjust seasoning or sweetness/heat as desired. Keep warm on the lowest heat.

Place the fried cauliflower in a large mixing bowl. Pour warmed buffalo sauce over the cauliflower and gently toss to coat each piece evenly. Work quickly so the batter stays crispy; avoid long resting in sauce—if you prefer a saucier bite, toss more gently and serve immediately.

Buttermilk Ranch Dressing

In a bowl whisk together mayonnaise, buttermilk, and sour cream until smooth. Stir in minced garlic, chopped chives, parsley, dried dill, lemon juice, salt and pepper. Taste and adjust acidity or seasoning. Chill for at least 10 minutes to let flavors meld. For a thinner dressing, add up to 1–2 tablespoons more buttermilk.

Serve

Arrange buffalo cauliflower bites on a platter with celery sticks and lemon wedges. Spoon buttermilk ranch into a small dish for dipping or drizzle lightly over the bites. Garnish with additional chopped chives or parsley.

Recommended: serve immediately while bites are hot and crisp. Leftovers can be reheated in a 400°F (200°C) oven for 8–10 minutes to crisp up, then re-tossed lightly in warm buffalo sauce.
