Mount the stainless steel draft tower securely to the bar top or wall. Position the kegerator or glycol-chilled draft system beneath or behind the bar so beer lines run directly to the taps with minimal bends. Ensure the cooling unit is level and connected to power.

Install Draft Tower and Cooling System

Receive 16 kegs from Ohio breweries, confirming each keg's style (lager, IPA, saison, stout, seasonal). Store kegs in the cooler at serving temperature appropriate for each style: lagers 36-40°F (2-4°C), hoppy ales/IPAs 40-46°F (4-8°C), saisons/Belgian ales 45-50°F (7-10°C), stouts 50-55°F (10-13°C).

Prepare Kegs

Cut and route 16 beer lines from each keg location to its corresponding faucet, minimizing bends and length to reduce foam. Attach quick disconnects and fittings to each keg coupler, then connect the opposite ends to the faucets at the tower. Label each line at both ends with the beer name or a numeric identifier.

Run and Connect Beer Lines

Connect CO2 cylinder(s) to the regulator(s) and then to the gas manifold. Set appropriate pressure per beer style: lagers 10-12 PSI, most ales 8-12 PSI, high-carbonation Belgian styles up to 15 PSI. For nitro-served stouts, connect nitrogen cylinder to its regulator and set around 30-40 PSI to the stout keg using a stout faucet or nitro restrictor. Double-check all connections for leaks using a soapy water solution.

Set Up Gas Supply

Attach each keg coupler to its assigned keg and open the gas to charge the keg. Pull beer through briefly to purge air from the lines, then recouple and check for steady flow. Adjust regulator pressures and pour a test pint from each tap to confirm pour speed and head: target a 1/2"–1" head depending on style (less for lagers, slightly more for ales and stouts on nitro).

Attach Kegs and Balance Pressure

Place inventory labels in each tap label holder or write the current selection on the chalkboard above the tap wall. Include brewery name, beer name, style, ABV, and IBU or tasting notes when possible. Rotate and update labels whenever kegs are swapped.

Label and Display

Ensure glassware appropriate for each style is clean and chilled (if desired). Set up the glass rinser or washer near the taps. Train servers to rinse glasses before each pour and to hold the glass at an angle (~45°) when starting a pour, straightening as it fills to produce the correct head. Advise staff on style-specific pour details (e.g., nitro stout: long pour to create cascading effect).

Glassware and Service Prep

Clean draft lines and faucets on a regular schedule—recommended every 2 weeks for highly hopped beers and monthly for others. Use the line cleaner and sanitizer: disconnect kegs, circulate cleaner through each line per manufacturer instructions, then flush thoroughly with water and sanitizer. Keep spare faucet parts on hand and replace worn seals, beer stones, or damaged lines promptly to prevent off-flavors.

Sanitizing and Line Maintenance

Use the thermometer and flow meter to periodically verify serving temp and flow rates. Adjust cooler settings and gas pressures as needed. Track each keg's pour rate to anticipate when a tap will run out and schedule swaps to keep all 16 taps rotating smoothly.

Monitor Temperatures and Flow

Coordinate with local Ohio breweries to rotate offerings regularly. When swapping a keg, follow the same disconnect, clean, and test-pour sequence. Update labels and staff tasting notes so servers can recommend current selections and describe styles to guests.
