Citrus-Mint Base (for multiple mocktails)

Make base syrup

Combine simple syrup, fresh lemon juice, fresh lime juice and cold water in a pitcher. Stir to combine until homogenous. This yields a balanced citrus syrup to sweeten and acidulate mocktails.

Infuse mint

Lightly bruise the mint leaves by clapping between hands or gently muddling. Add the mint to the pitcher, stir, and let steep in the refrigerator for at least 15 minutes (up to 2 hours) to infuse bright herbal notes. Strain out mint before service if you prefer a clear base.

Ginger-Honey Shrub (for spiced mocktail)

Prepare shrub

In a small saucepan combine sliced ginger, apple cider vinegar, honey, and water. Warm gently over low heat just until honey thins and dissolves (do not boil) about 3–4 minutes. Remove from heat, cover, and let cool to room temperature, then refrigerate and steep for at least 2 hours or overnight for stronger ginger flavor. Strain out ginger slices before using. Yields a concentrated ginger-honey shrub for 6–8 servings.

Adjust sweetness

Taste the shrub; if too sharp add a tablespoon or two of simple syrup to soften the acidity, or dilute with a splash of water. Keep refrigerated up to 2 weeks.

Cucumber-Basil Cooler (light, herbaceous)

Make cucumber-basil puree

Place chopped cucumber, basil leaves, lime juice and simple syrup into a blender. Pulse until smooth (about 20–30 seconds). If you want a very smooth texture, strain the puree through a fine-mesh sieve, pressing to extract as much liquid as possible. This yields about 1 cup of concentrated cucumber-basil mix.

Finish the cooler

To serve a single mocktail: fill a highball glass with 1/4 cup cucumber-basil puree, add 1/2 cup chilled sparkling water, a large handful of ice, stir gently, and garnish with a cucumber ribbon and basil leaf. For pitcher service, mix 1 cup puree with 3 cups sparkling water, chill and serve over ice.

Ginger-Honey Sparkler (spiced mocktail)

In a rocks glass filled with ice add 1.5 tablespoons ginger-honey shrub (about 0.75 oz) and 2 tablespoons citrus-mint base. Top with 4–5 ounces (1/2 cup) club soda, stir gently to combine. Garnish with a lime wheel and a mint sprig. For a sweeter version increase shrub to 1 tablespoon.

Citrus-Mint Fizz (bright mocktail)

In a Collins or highball glass filled with ice add 3 tablespoons citrus-mint base, squeeze in an additional lime wedge if desired, and top with 6 ounces (3/4 cup) club soda. Stir once, garnish with a mint sprig and lemon wheel. Serve immediately.

Cucumber-Basil Cooler (light mocktail)

In a glass with ice add 1/4 cup cucumber-basil puree, 2 tablespoons citrus-mint base for acidity balance, top with 1/2 cup sparkling water or club soda, stir gently, and garnish with a cucumber ribbon and basil leaf.

Batching and substitutions

For pitcher service multiply ingredient ratios as indicated in each section (citrus-mint base makes roughly 8 single servings at the quantities listed; cucumber-basil puree mixes with 3 cups sparkling water for a pitcher). To make any signature cocktail alcohol-free, replace spirits with equal volume of club soda, sparkling water or an unsweetened tea depending on the original flavor profile — here the citrus-mint base plus shrub or cucumber-basil puree provide body and complexity without alcohol.

Garnish and serve notes

Always serve cold over fresh ice. Slap mint before garnishing to release aroma. Use thin cucumber ribbons or lime wheels for a professional appearance. Offer extra simple syrup or shrub at the table for guests who want sweeter drinks.
