Sauté the Base

In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent.

Add Potatoes and Tomatoes

Stir in the diced potatoes and canned tomatoes. Cook for about 5 minutes, stirring occasionally.

Add Stock and Seasonings

Pour in the fish stock, add bay leaves, thyme, red pepper flakes, salt, and black pepper. Bring the mixture to a boil, then reduce to a simmer.

Simmer the Stew

Let the stew simmer for about 15 minutes until the potatoes are tender.

Add Seafood

Gently add the shrimp, scallops, clams, and flounder chunks to the pot. Cook for another 5-7 minutes, or until the seafood is cooked through and clams have opened.

Finish and Serve

Remove bay leaves before serving. Stir in chopped fresh parsley and serve hot.
