Olives and Accompaniments

Method

Preparation

1

Prepare the Olives

In a medium skillet, heat 2 tablespoons of olive oil over medium heat. Add the Castelvetrano olives and sauté for about 5 minutes, stirring occasionally until they are warmed through and slightly blistered.

2

Add the Almonds and Chiles

Add the Marcona almonds and morita chiles to the skillet. Cook for an additional 3-4 minutes, stirring frequently until the almonds are golden and fragrant.

3

Finish with Preserved Lemon

Remove the skillet from heat and stir in the preserved lemon. Drizzle the remaining tablespoon of olive oil over the mixture and season with sea salt to taste.

4

Serve

Transfer the warm olives and almond mixture to a serving dish. If desired, sprinkle with fresh parsley for garnish and serve immediately.
