Prepare the Chicken
Preheat your grill to medium-high heat. Season the chicken breasts with olive oil, salt, pepper, garlic powder, and paprika.
Grill the Chicken
Place the seasoned chicken breasts on the grill. Cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). During the last minute of cooking, place a slice of Swiss cheese on each chicken breast to melt.
Prepare the Fries
While the chicken is grilling, wash and cut the potatoes into fries. Toss with olive oil, salt, and pepper. Spread them on a baking sheet and bake in a preheated oven at 425°F (220°C) for 25-30 minutes, flipping halfway through, until golden and crispy.
Assemble the Sandwich
Slice the tomato. Place arugula on the bottom half of the potato bun, followed by the grilled chicken with melted Swiss cheese, slices of tomato, and a generous spread of herb aioli. Top with the other half of the bun.
Serve
Serve the grilled chicken sandwich with a side of crispy fries.
