Prepare the Potatoes

Wash and peel the Russet potatoes. Using a mandoline or a sharp knife, slice the potatoes very thinly (about 1/8 inch thick).

Soak the Slices

Place the potato slices in a bowl of cold water and let them soak for at least 30 minutes. This helps remove excess starch and makes the chips crispier.

Dry the Potatoes

After soaking, drain the potato slices and pat them dry with a clean kitchen towel or paper towels to remove excess moisture.

Heat the Oil

In a large, heavy-bottomed pot or deep fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer for accuracy.

Fry the Chips

Carefully add a handful of potato slices to the hot oil, making sure not to overcrowd the pot. Fry for about 3-4 minutes or until golden brown and crispy. Stir occasionally to ensure even cooking.

Drain and Season

Remove the chips with a slotted spoon and place them on a paper towel-lined plate to drain excess oil. While they are still hot, sprinkle with salt, paprika, garlic powder, and black pepper to taste.

Continue frying in batches until all potato slices are cooked. Serve immediately for the best crunch!
