Prepare the Peaches
Wash and pit the fresh peaches. Cut them into small pieces and place them into a blender.
Blend the Peach Puree
Blend the peach pieces until smooth to create a peach puree. Set aside.
Muddle the Mint
In a large pitcher, add the fresh mint leaves and use a muddler or the back of a spoon to gently press them down. This will release the mint oils.
Combine Ingredients
Add the peach puree, lime juice, white rum, and simple syrup to the pitcher with the muddled mint. Stir well to combine all the flavors.
Add Ice
Fill serving glasses with ice cubes, about halfway full.
Pour the Mojito
Pour the peach mojito mixture over the ice in each glass until almost full.
Garnish and Serve
Garnish each glass with peach slices and a sprig of mint. Serve immediately and enjoy!
