Method
Prepare Chicken
Pat wings dry with paper towels. Removing surface moisture helps them get crisp.
In a large bowl, combine kosher salt, black pepper, baking powder, and garlic powder. Toss wings with the dry mix until evenly coated. Let sit 10 minutes at room temperature while you heat oil or preheat oven.
Cook Wings (frying method)
Fry
Heat 1 to 1 1/2 inches of vegetable oil in a heavy skillet or deep fryer to 350°F (175°C). Fry wings in batches without overcrowding for 8–10 minutes per batch, turning as needed, until golden brown and internal temperature reaches 165°F (74°C). Transfer to a wire rack set over a sheet pan to drain. Keep warm in a 200°F oven if needed.
Cook Wings (oven-baked alternative)
Bake
Preheat oven to 425°F (220°C). Place coated wings on a wire rack set over a baking sheet lined with foil. Bake for 25–30 minutes, then flip and bake an additional 10–15 minutes until skin is crisp and internal temperature is 165°F (74°C).
Make Coca-Cola Glaze Base
In a medium saucepan over medium heat, combine 1 cup Coca-Cola, 1 tablespoon brown sugar, 2 tablespoons soy sauce, and 1 tablespoon apple cider vinegar. Bring to a gentle simmer, stirring occasionally.
Simmer the mixture for 10–12 minutes, stirring occasionally, until reduced and slightly syrupy (volume should reduce by about half). Watch closely to avoid burning.
Mix 1 teaspoon cornstarch with 1 tablespoon cold water to make a slurry. Whisk the slurry into the simmering glaze and cook 1–2 minutes until thickened. Remove from heat and whisk in 2 tablespoons unsalted butter until glossy.
Finish with Chosen Sauce Option
HOT
For the Hot option: stir 3 tablespoons hot sauce into the warm Coca-Cola glaze. Taste and adjust heat by adding chile flakes if desired. Toss fried/baked wings in the glaze until evenly coated.
LEMON PEPPER
For Lemon Pepper: do not add extra liquid. Instead, lightly brush wings with a tablespoon of the Coca-Cola glaze for sweetness, then immediately sprinkle with 1 teaspoon lemon zest mixed with 1 teaspoon cracked black pepper and 1 tablespoon melted butter. Toss to combine so the lemon pepper sticks to the glaze.
SWEET HIBACHI
For Sweet Hibachi: stir 1 cup hibachi-style teriyaki or sweet soy glaze into the Coca-Cola glaze and 1 tablespoon honey. Warm gently and toss wings in the mixture until well coated. Finish with sesame seeds if desired.
Garnish & Serve
After tossing in sauce, transfer wings to a serving platter. Squeeze juice from half a lemon over the wings for brightness (omit for BBQ option if too tangy).
Sprinkle chopped parsley or sliced green onions over the wings and finish with a small pinch of sesame seeds for Sweet Hibachi or a grind of black pepper for Lemon Pepper. Serve immediately with napkins and dipping sauce if desired.
