Prep & Season

Pat wings dry thoroughly with paper towels. Dryness is essential for crisping and for the dry rub to adhere.

Place wings in a large bowl. Add kosher salt and black pepper and toss to coat evenly.

Apply Dry Rub

Choose either the Cajun seasoning or the Blackened seasoning. Sprinkle 2 tablespoons of the selected dry rub over the wings and toss until evenly coated. For more intense flavor, cover and refrigerate for 30–60 minutes (or up to overnight).

Optional Breading for Extra Crisp

If you want an extra-crispy crust, combine flour, cornstarch and baking powder in a shallow bowl. Dredge each seasoned wing lightly in the flour mixture, shaking off excess. This step is optional but recommended for an extra-crispy exterior.

Cooking (Oven Method)

Preheat oven to 425°F (220°C). Line a large baking sheet with foil and place a wire rack on top. Lightly oil the rack.

Arrange wings in a single layer on the rack, leaving space between pieces for air circulation.

Bake for 25 minutes, then flip wings and bake for an additional 15–20 minutes, or until internal temperature reaches 165°F (74°C) and skin is crisp and golden. Total bake time ~40–45 minutes depending on size.

For extra crispness, broil on high for 2–3 minutes at the end — watch closely to avoid burning.

Cooking (Alternate: Frying Method)

Heat 3 cups neutral oil (not listed separately) in a deep pot to 350°F (175°C). Fry wings in batches for 8–10 minutes until golden and cooked through. Drain on a wire rack or paper towels. If you used the optional flour dredge, drain a bit longer to let crust firm.

Sauce Preparation & Tossing

Hot (Buffalo) Sauce

Melt 4 tablespoons unsalted butter in a small saucepan over low heat. Stir in 2 tablespoons hot sauce until combined and warmed through. Remove from heat.

BBQ Sauce

Warm 1/4 cup bbq sauce in a small saucepan over low heat, stirring until slightly reduced and glossy. Optionally stir in 1 tablespoon melted butter for sheen.

Asian Sauce

In a small saucepan, combine 1 tablespoon soy sauce, 1 tablespoon hoisin, 1 teaspoon rice vinegar, 1 tablespoon honey, and 1/2 teaspoon minced garlic. Warm gently until glossy and slightly thickened, about 2–3 minutes.

Garlic Parmesan

Melt 2 tablespoons butter in a saucepan, add 1 teaspoon minced garlic and sauté 30 seconds. Remove from heat and stir in 3 tablespoons grated Parmesan and a pinch of black pepper until combined. Keep warm.

Spicy Honey

Warm 3 tablespoons honey with 1 tablespoon hot sauce (or 1/2 tsp chili flakes) in a small saucepan until fluid and combined. Remove from heat.

Jamaican BBQ (Jerk-BBQ)

Combine 1/4 cup bbq sauce with 1 tablespoon jerk seasoning and 1 tablespoon honey in a small saucepan. Warm until sauce is cohesive and glossy, 2–3 minutes.

Place cooked wings in a large clean bowl. Pour chosen warmed sauce over the wings and toss gently but thoroughly to coat each piece. For a light glaze, reserve 1–2 tablespoons of sauce to brush on after plating.

Finish & Serve

Transfer sauced wings to a serving platter. Sprinkle chopped parsley or sliced green onions on top. Serve with lemon wedges and blue cheese or ranch dressing on the side.

If you want some wings dry-rubbed only (no sauce), reserve 4–6 pieces before tossing and serve them plain with the dry rub highlighted.
