Prepare the Filling

In a mixing bowl, combine the shredded corned beef, drained sauerkraut, shredded Swiss cheese, and Thousand Island dressing. Mix well until all ingredients are evenly combined.

Prepare the Spring Roll Wrappers

Lay a spring roll wrapper flat on a clean surface, with one corner facing you. Place about 2-3 tablespoons of the filling mixture in the center of the wrapper.

Roll the Spring Rolls

Fold the bottom corner of the wrapper over the filling, then fold in the sides and roll tightly away from you to form a spring roll. Seal the edge with a little water if necessary. Repeat with remaining wrappers and filling.

Frying

Heat the Oil

In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Spring Rolls

Carefully add the spring rolls to the hot oil, a few at a time, making sure not to overcrowd the pan. Fry for 3-4 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.
