Preparation
Prepare the Ingredients
Slice the corned beef into thin pieces if not already pre-sliced. Drain the sauerkraut and set aside. If using pickles, slice them into thin rounds.
Assembly
Layer the Sandwich
Take two slices of marble rye bread and spread 2 tablespoons of Thousand Island dressing on one side of each slice. On one slice, layer the corned beef, followed by the sauerkraut, and then the Swiss cheese. Top with the other slice of bread, dressing side down.
Cooking
Grill the Sandwich
In a skillet over medium heat, melt 1 tablespoon of butter. Place the assembled sandwich in the skillet. Cook for about 3-4 minutes on one side, or until golden brown. Carefully flip the sandwich and add the remaining tablespoon of butter to the skillet. Cook for another 3-4 minutes until the other side is golden brown and the cheese is melted.
Serving
Serve
Remove the sandwich from the skillet, slice it in half, and serve hot with extra Thousand Island dressing and pickles on the side if desired.
