Fit Turkey Wrap

In a large mash tun, add the 20 liters of water and heat it to approximately 67°C (153°F). Gradually add the Pale Malt, Crystal Malt, and Caramalt while stirring to prevent clumping. Maintain this temperature for 60 minutes to allow the enzymes to convert the starches into fermentable sugars.

Mashing

After mashing, drain the wort from the mash tun into a kettle, ensuring all liquid is collected. Rinse the grains with 10 liters of hot water to extract more sugars, then combine this water with the drained wort.

Lautering

Bring the collected wort to a rolling boil. Once boiling, add the Fuggle hops and boil for 60 minutes. This will contribute to the bitterness of the beer.

Boil the Wort

With 15 minutes remaining in the boil, add the East Kent Goldings hops to provide aroma and flavor to the beer.

Add Aroma Hops

After the 60-minute boil, cool the wort quickly using a wort chiller or an ice bath to around 20°C (68°F). This is crucial to avoid contamination and to prepare the wort for fermentation.

Cooling the Wort

Once cooled, transfer the wort to a sanitized fermentation vessel. Sprinkle the English Ale Yeast over the surface of the wort and seal the vessel with an airlock.

Pitching Yeast

Allow the beer to ferment at a stable temperature of around 18-20°C (64-68°F) for approximately 1-2 weeks, or until fermentation is complete and bubbles cease in the airlock.

Fermentation

Once fermentation is complete, sanitize your bottles and caps. Siphon the beer into the bottles, leaving about 2.5 cm (1 inch) of headspace. Cap the bottles and allow them to carbonate at room temperature for another 1-2 weeks.
