Prepare and preheat

Preheat oven to 350°F (175°C). Grease and line the bottom of an 8-inch round cake pan with parchment; grease the sides lightly with oil or butter.

Dry ingredients

In a medium bowl whisk together 1.5 cups all-purpose flour, 1.5 tsp baking powder and 1/4 tsp salt until evenly combined.

Wet ingredients

In a separate large bowl whisk 3 large eggs with 3/4 cup granulated sugar until pale and slightly thickened (about 2–3 minutes by hand or 1 minute with a mixer). Mix in 4 tbs melted butter, 1 tsp vanilla extract and 1/2 cup milk until smooth.

Combine and bake

Fold the dry ingredients into the wet mixture gently until just combined; do not overmix. Pour batter into the prepared pan and bake 22–28 minutes, or until a toothpick inserted in the center comes out clean and the top springs back. Let cool in pan 10 minutes, then remove to a rack to cool completely.

Choose 2–3 flavor spreads

Decide which flavor layers you'd like to rotate in this dessert (examples provided: mixed berry compote, chocolate ganache, lemon curd, salted caramel). Prepare or have these ready at room temperature so they spread easily.

Mixed berry compote (if making)

Combine 1 cup mixed berries (fresh or frozen), 2 tbs sugar and 1 tbs lemon juice in a small saucepan. Cook over medium heat, stirring, until berries break down and mixture thickens (6–8 minutes). Cool to room temperature before using.

Chocolate ganache (if making)

Heat 1/2 cup heavy cream to simmering, pour over 4 oz (about 3/4 cup) chopped semisweet chocolate or chips in a bowl. Let sit 1 minute then stir until smooth. Cool slightly so it is spreadable but still pourable.

Lemon curd (if using jarred or homemade)

Use 1/2 cup prepared lemon curd or make quickly by whisking 2 egg yolks, 1/4 cup lemon juice, 1/2 cup sugar and 2 tbs butter over a double boiler until thickened. Cool before layering.

Salted caramel (if making)

Warm 1/2 cup prepared salted caramel to a pourable consistency. If homemade, carefully melt 1/2 cup sugar until amber, add 2 tbs butter, then stir in 1/4 cup heavy cream and a pinch of salt; cool slightly.

Hollow or slice the sponge

If you want a layered rotating center, level the cooled sponge and cut horizontally into two even layers. Alternatively, leave whole and hollow a shallow ring from the center top to create a recess for rotating fillings.

Spread first layer

Place bottom sponge layer on a turntable or serving plate. Spread an even layer (about 1/3 cup) of your first chosen flavor (e.g., mixed berry compote) across the surface, leaving a 1/4-inch border to avoid overflow when stacking.

Add whipped cream gate

Whip 2 cups heavy cream with 3 tbs powdered sugar (and 4 oz softened cream cheese if you prefer a stabilized cream) to medium-stiff peaks. Dollop or pipe a ring of whipped cream around the outer edge of the bottom layer — this acts as a barrier to keep rotating fillings from seeping out.

Add second flavor and repeat

Add the second flavor (about 1/3 cup; e.g., chocolate ganache warmed slightly so it spreads) into the center. If using a third flavor, layer it thinly between or on top of the second. Top with the second sponge layer and gently press to set, aligning edges.

Coat and finish

Crumb-coat the assembled cake with a thin layer of whipped cream to lock crumbs. Chill in the refrigerator 20 minutes. Apply a final smooth coat of whipped cream and, if desired, drizzle small streams of extra caramel or ganache in a spiral. Sprinkle toasted nuts and fresh berries on top. Dust lightly with powdered sugar if desired.

Optional rotating presentation

Set the finished dessert on a small rotating serving stand or cake turntable. When presenting, slowly spin the cake while spooning or drizzling a contrasting sauce (extra berry compote, warm ganache or caramel) over the center so the sauces trail slightly and create a dynamic 'rotating' visual effect.

Serving

Slice with a sharp knife warmed under hot water and wiped dry between cuts for clean slices. Serve 1 slice per person with extra sauce on the side if desired.

Storage

Keep refrigerated in an airtight container for up to 3 days. If using fresh components like whipped cream, consume within 48 hours for best texture. For longer storage, freeze unfrosted sponge layers tightly wrapped for up to 1 month; thaw before assembling.
