    Bring to room temperature

    Remove the 8 oz beef tenderloin from the refrigerator 30–45 minutes before grilling so it comes to room temperature. Pat the steak dry on all sides with paper towels.

    Make marinade/oil

    In a small bowl combine 1 tablespoon olive oil, minced garlic, chopped rosemary and thyme. Stir to combine.

    Season steak: Rub the oil-herb mixture evenly over all sides of the tenderloin. Sprinkle kosher salt and freshly ground black pepper evenly on both sides and the edges, pressing gently so the seasonings adhere.

Grilling

    Preheat grill

    Preheat a gas or charcoal grill to high heat so the grill grate surface reaches about 500°F (260°C). If using a charcoal grill, set up for two-zone cooking (hot direct zone and cooler indirect zone). Oil the grill grates lightly to prevent sticking.

    Sear the tenderloin

    Place the seasoned tenderloin directly over the hottest part of the grill. Sear undisturbed for 2–3 minutes to develop a brown crust, then rotate 45° and sear an additional 1–2 minutes to create crosshatch grill marks. Flip and repeat on the other side (total sear time about 5–6 minutes).

    Finish to temperature

    After searing, move the tenderloin to the cooler part of the grill (indirect heat). Close the lid and continue grilling until the internal temperature reaches your desired doneness: 120°F (49°C) for rare, 125–130°F (52–54°C) for medium-rare, 135°F (57°C) for medium. Expect about 6–12 minutes on indirect heat depending on thickness and grill temperature. Use an instant-read thermometer inserted into the center to check temperature.

Resting & Finishing

    Rest the steak

    Transfer the grilled tenderloin to a cutting board and tent loosely with foil. Let rest for 5–10 minutes. Resting allows juices to redistribute and carries final internal temperature up 3–5°F.

    Finish with butter and garnish

    While the steak rests, place 1 tablespoon room-temperature butter on top of the tenderloin so it melts into the crust. Sprinkle chopped parsley and serve with lemon wedges alongside. Slice against the grain into 1/2-inch slices if serving family-style.
