    Hard boil eggs

    Place 12 large eggs in a single layer in a saucepan and add cold water to cover by 1 inch (about 1.5 L water). Bring to a rolling boil over medium-high heat. Once boiling, cover the pan, remove from heat, and let sit off the burner for 10–12 minutes for fully hard-cooked yolks. Meanwhile prepare an ice bath (large bowl with ice and cold water).

    After the rest period, transfer eggs to the ice bath and chill 5–10 minutes to stop cooking and make peeling easier.

    Peel eggs carefully and pat dry. Halve each egg lengthwise. Gently remove yolks into a medium bowl and place whites on a serving platter or tray, cut side up.

    Make brown butter

    In a small skillet over medium heat, melt 2 tablespoons unsalted butter. Continue cooking, swirling pan occasionally, until butter foams and solids turn golden brown and smell nutty, about 3–4 minutes. Remove from heat immediately and let cool 1–2 minutes (do not let it burn).

    Mash the cooked yolks with a fork until crumbly. Add mayonnaise, Dijon mustard, white wine vinegar, cooled brown butter (drizzle in and mix), 1 teaspoon fine sea salt, 1/2 teaspoon black pepper, 1/2 teaspoon smoked paprika, and 1 tablespoon chopped chives. Mix until smooth but still slightly textured. Taste and adjust seasoning (add more salt, pepper, or vinegar if needed).

    Transfer the yolk mixture to a piping bag fitted with a large star or round tip (or use a zip-top bag with a corner snipped). Pipe or spoon the mixture into the egg white halves, mounding slightly.

Cheese Crisps (GF)

    Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone mat.

    Place rounded tablespoon-sized mounds of grated Parmesan onto the prepared sheet, spaced 1–1.5 inches apart. Gently flatten each mound with the back of a spoon into ~2.5 inch circles. Sprinkle each with a light pinch of black pepper and the optional pinch of cayenne if using.

    Bake for 5–8 minutes, watching closely. Cheese should melt, spread slightly, and turn golden at the edges. Remove from oven and let crisps cool 2–3 minutes on the sheet; they will firm up as they cool. Use a thin spatula to transfer crisps to a cooling rack to crisp completely.

    When crisps are fully cool, if any are uneven, press gently to flatten. Use immediately to top each deviled egg (one crisp per egg half) or store crisps in an airtight container at room temperature up to 24 hours (they may soften if exposed to humidity).

Assembly & Garnish

    Arrange filled deviled eggs on a serving platter. Top each filled egg with a single Parmesan crisp, or break crisps into smaller shards for a more rustic garnish if desired.

    Sprinkle a light dusting of smoked paprika over the eggs. Scatter remaining chopped chives and microgreens over the platter for color and freshness.

    Serve immediately so cheese crisps remain crunchy alongside the creamy filling. If preparing ahead, store filled eggs loosely covered in the refrigerator up to 6 hours; add crisps just before serving.
