Prepare demerara syrup (if not ready)
Combine equal parts demerara sugar and hot water (for example 1/2 cup sugar + 1/2 cup water). Stir until sugar dissolves. Cool completely before using. Store refrigerated up to 2 weeks.

Add Tito's Vodka (2 oz), Cocchi Torino (1/2 oz), Amaretto (1/2 oz), fresh lime juice (1/2 oz), demerara syrup (1/2 oz) and spiced cranberry bitters (2 dashes) into a cocktail shaker.

Fill the shaker about two-thirds full with fresh ice.

Dry shake (no additional ice) for 5–7 seconds only if you want slightly more texture from the amaretto; otherwise proceed directly to a hard shake. Seal the shaker and shake vigorously for 12–15 seconds until well chilled and slightly diluted.

Dump the ice and water from the chilled glass. Double-strain the cocktail into the chilled coupe or nick & nora glass using a Hawthorne strainer and a fine mesh strainer to remove small ice shards and any pulp from the lime.

Express the oils of an orange twist over the surface of the cocktail by holding the twist about 3–4 inches above the drink and giving it a firm snap so the oils spritz onto the drink. Rub the twist around the rim and place it on the surface as a garnish.
