Prepare the Potatoes

Wash and peel the russet potatoes. Cut them into thin strips to create frites. Soak the cut potatoes in cold water for at least 30 minutes to remove excess starch.

Drain the soaked potatoes and pat them dry with a clean kitchen towel to ensure they are as dry as possible.

In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

Carefully add the dried potato strips to the hot oil in batches, frying until golden brown and crispy, about 4-5 minutes. Remove with a slotted spoon and drain on paper towels.
