Prepare the Frites

Peel and cut the potatoes into long, thin strips to create frites. Rinse them in cold water to remove excess starch and pat them dry with a paper towel.

Fry the Frites

In a deep fryer or large pot, heat oil to 350°F (175°C). Fry the potato strips in batches until golden brown and crispy, about 4-5 minutes. Remove and drain on paper towels. Drizzle with truffle oil and season with salt and pepper.

Cook the Steak

Season the butcher's cut steak with salt and black pepper on both sides. Heat a skillet or grill over medium-high heat and cook the steak for about 4-5 minutes on each side for medium-rare, or until your desired doneness. Let it rest for a few minutes before slicing.

Serve

Slice the steak against the grain and serve alongside the truffle frites. Drizzle with Béarnaise sauce for added flavor.
