Preparation Directions
Prepare the Shrimp
In a bowl, toss the shrimp with Cajun seasoning, salt, and pepper. Ensure the shrimp are well coated.
Cook the Shrimp
Heat a skillet over medium-high heat. Add a drizzle of oil and cook the seasoned shrimp for about 2-3 minutes on each side or until they are pink and cooked through. Remove from heat.
Prepare the Cucumber Boats
Cut the English cucumbers in half lengthwise and scoop out the seeds with a spoon, creating a boat.
Make the Avocado Mousse
In a blender or food processor, combine avocado, lime juice, salt, and pepper. Blend until smooth and creamy.
Drizzle with Dressing
Drizzle the smoked buttermilk dressing over the assembled cucumber boats and sprinkle with chopped chives.
