Prepare the Fries

If using frozen fries, cook according to package instructions. If using fresh fries, slice potatoes, soak in water for 30 minutes, and then fry until golden and crispy.

Prepare the Lobster Filling

In a mixing bowl, combine the lobster meat, tarragon aioli, salt, and black pepper. Mix gently to combine, being careful not to break up the lobster too much.

Toast the Brioche Rolls

In a skillet, melt the butter over medium heat. Slice the brioche rolls in half and place them cut-side down in the skillet. Toast until golden brown.

Assemble the Lobster Rolls

Fill each toasted brioche roll with the lobster mixture. Serve immediately alongside the fries.
