Method
Prepare Shrimp
Boil the Shrimp
In a large pot, bring 4 cups of water to a boil. Add 1 tablespoon of salt and the halved lemon. Once boiling, add the shrimp and cook for 2-3 minutes, or until the shrimp turn pink and opaque.
Cool the Shrimp
Remove the shrimp from the pot and immediately place them in an ice bath to stop the cooking process. Once cooled, drain and set aside.
Make Aji Amarillo Sauce
Mix the Sauce
In a bowl, combine 2 tablespoons of aji amarillo paste, 1 cup of mayo, 2 tablespoons of lime juice, 1 teaspoon of minced garlic, and 1 teaspoon of salt. Mix until smooth and well combined.
Prepare Salsa Cerde
Combine Ingredients
In a separate bowl, mix 1 cup of diced tomatoes, 1 small finely chopped red onion, 1 tablespoon of chopped cilantro, 1 tablespoon of lime juice, and 1 teaspoon of salt. Stir well to combine.
Serve
Plate the Shrimp Cocktail
Arrange the cooked shrimp on a serving platter. Serve with a side of aji amarillo sauce and salsa cerde for dipping.
