Burger Preparation

  1. 1

    Prepare the Patties

Form the ground beef into two equal patties, roughly 4oz each. Season with salt and pepper to taste.

  2. 2

    Smoke the Patties

Preheat your smoker to 225°F (107°C). Place the patties in the smoker and smoke for about 30-40 minutes, or until they reach an internal temperature of 160°F (71°C).

  3. 3

    Add Cheese

In the last 5 minutes of smoking, place a slice of American cheese on each patty to melt.

  4. 4

    Prepare the Brioche Rolls

Toast the brioche rolls on the grill or in a toaster until golden brown.

  5. 5

    Assemble the Burger

Place one smoked patty on the bottom half of each brioche roll. Top with pickles, onion, and a generous drizzle of Alabama white sauce before placing the top half of the roll on.

  6. 6

    Serve with Fries

Serve the burgers alongside a cup of fries.
