Prepare the Shrimp
In a bowl, soak the shrimp in buttermilk for at least 30 minutes to tenderize and flavor.

Mix the Breading
In a shallow dish, combine flour, cornmeal, cajun seasoning, salt, and black pepper.

Heat the Oil
In a deep skillet or frying pan, heat vegetable oil over medium-high heat until hot.

Bread the Shrimp
Remove shrimp from buttermilk, allowing excess to drip off. Dredge shrimp in the flour mixture, coating evenly.

Fry the Shrimp
Carefully place the breaded shrimp in the hot oil. Fry until golden brown and cooked through, about 2-3 minutes per side. Drain on paper towels.

Assemble the Po'Boy
Slice the hoagie rolls lengthwise. Spread cajun remoulade on both sides of the rolls. Layer with shredded lettuce, fried shrimp, and tomato slices.

Serve the shrimp po'boys with hot french fries on the side.
