    Prepare the Vegetables

    Wash and chop the seasonal vegetables into bite-sized pieces. Set aside.

    Sear the Scallops

    Heat olive oil in a large skillet over medium-high heat. Season the scallops with salt and pepper. Once the oil is hot, add the scallops and sear for about 2-3 minutes on each side, until they are golden brown and cooked through. Remove from skillet and set aside.

    Make the Garlic Butter

    In the same skillet, reduce the heat to medium and add the butter. Once melted, add minced garlic and sauté for about 1 minute until fragrant.

    Cook the Vegetables

    Add the chopped seasonal vegetables to the skillet and sauté for about 5-7 minutes, until tender but still crisp. Stir in lemon juice and chopped parsley.

    Combine and Serve

    Return the scallops to the skillet, toss gently to coat with the garlic butter and vegetables. Serve immediately.
