Preparing Oysters and Mignonette

Prepare the Mignonette
In a small bowl, combine the rhubarb, grated ginger, red wine vinegar, sugar, and a pinch of salt. Mix well and let it sit for at least 30 minutes to allow the flavors to meld.

Shuck the Oysters
Using an oyster knife, carefully shuck the oysters, discarding the top shell and keeping the oyster in the bottom shell. Place them on a serving platter with ice to keep them chilled.

Serve
Drizzle the rhubarb-ginger mignonette over the oysters and serve with Tabasco sauce on the side for those who like extra heat.
