Influenced by lager styles from Japan, Germany and the American prohibition. This light bodied, golden lager is our original brew, and a national award winning beer in 2023. It has a malt forward backbone that is accentuated by a crisp, dry finish.

In a large pot, heat 5 liters of water to about 160°F (71°C). Add the pale malt and caramel malt, stirring well. Maintain the temperature for 60 minutes to allow the sugars to extract.

Mashing

After mashing, sparge the grains with hot water to collect about 6 liters of wort in your brew kettle.

Sparging

Bring the wort to a boil and add the Hallertau hops. Boil for 60 minutes, adding the Saaz hops in the last 15 minutes of the boil.

Boiling

Cool the wort quickly to about 70°F (21°C) using an immersion chiller or an ice bath.

Cooling

Transfer the cooled wort to a sanitized fermenter. Pitch the yeast and seal with an airlock. Ferment at 50-55°F (10-13°C) for 2 weeks.

Fermentation

After fermentation, dissolve the priming sugar in a small amount of water, add it to the beer, and bottle. Allow to carbonate for another 2 weeks.
