Prep potatoes

Wash and scrub the russet potatoes. Peel them if you prefer (optional). Cut each potato into 1/4-inch to 1/3-inch sticks (standard fry shape). Rinse the cut fries in cold water in a large bowl until the water runs clear to remove excess starch (about 2–3 changes).

Soak and dry

Soak the rinsed fries in cold water for 20–30 minutes (this helps them crisp). After soaking, drain and spread the fries on clean kitchen towels or paper towels and pat completely dry. Moisture will cause oil splatter and soggy fries.

Heat oil

Pour 1 cup vegetable oil into a large skillet or heavy-bottomed pot (enough for a 1-inch depth) and heat over medium-high until the oil reaches about 350°F (175°C). If you don't have a thermometer, test by slipping a single fry in: it should sizzle steadily.

Fry in batches

Working in batches to avoid crowding, fry the potatoes for 4–6 minutes per batch until they are pale golden and mostly cooked through. Use a slotted spoon to transfer fries to a paper-towel-lined tray. Let them rest 3–5 minutes.

Crisp finish

Increase oil temperature to about 375°F (190°C). Return the partially cooked fries in batches and fry 1–2 minutes more until golden brown and crisp. Transfer to fresh paper towels and immediately season with salt, pepper, and paprika (if using). Keep fries warm in a low oven (200°F / 95°C) on a baking sheet while you cook hot dogs if needed.

Prepare toppings and buns

While potatoes are soaking or frying, dice the onion and set out mustard, ketchup, and relish. Spread butter or brush oil on the inside of each hot dog bun.

Cook hot dogs (pan method)

Heat a large skillet or grill pan over medium heat. Place the hot dogs in the pan and cook, turning occasionally, about 6–8 minutes until browned and heated through. You can also grill or boil if preferred (grill 6–8 minutes, turning; boil 5–7 minutes).

Toast buns

After the hot dogs are nearly done, place buttered buns in a separate pan, buttered side down, and toast over medium heat 1–2 minutes until golden. Alternatively, place buns on the grill or under a broiler for 30–60 seconds watching closely.

Assemble

Place one cooked hot dog in each toasted bun. Top each with 1 tbs mustard, 1 tbs ketchup, 1 tsp relish, and a sprinkle of diced onions (adjust to taste). Serve hot immediately alongside the freshly fried fries.
