Prepare base mixes

Make vodka citrus punch

In a large pitcher combine 3 cups vodka citrus punch base (or mix 2 cups vodka + 1 cup fresh orange juice + 1/4 cup simple syrup + 1/4 cup fresh lime juice). Stir well and taste for balance; adjust with simple syrup or lime juice. Chill until assembly.

Make dark rum mai tai mix

In a separate pitcher combine 3 cups dark rum mai tai mix (or mix 2 cups dark rum + 1 cup pineapple juice + 2 tbsp fresh lime juice + 2 tbsp simple syrup). Stir and chill.

Make gin & tonic mix

Combine 3 cups gin & tonic mix by mixing 2 cups gin with 1 cup chilled tonic (or chilled club soda if you want less bitterness). Keep chilled; top with additional club soda at service if needed.

Prepare dispensers and ice

Place your tiered beverage dispensers or stacked towers on a stable table with a drip tray or tray underneath each spigot. Fill the bottom reservoir of each tower with a layer (about 1–2 cups) of crushed ice to keep liquids chilled without watering them down too quickly.

If using separate dispensers for each cocktail, designate one for the vodka citrus punch, one for the dark rum mai tai, and one for the gin & tonic. If you have more towers, you can split batches to flow from top to bottom for dramatic presentation.

Assemble cocktail towers

Carefully pour the chilled vodka citrus punch into the first dispenser until it is about 3/4 full. Add a layer of crushed ice on top if desired to keep extra-cold presentation.

Pour the dark rum mai tai mix into the second dispenser in the same way, leaving headroom for ladling and garnish.

Pour the gin & tonic mix into the third dispenser and top with 1–2 cups chilled club soda just before service to preserve fizz.

Garnish and label

Float a few orange wheels and maraschino cherries in the rum dispenser, a few lime wheels in the vodka dispenser, and a few mint sprigs plus lime wheels in the gin tower. Add a small sign or label to each dispenser with the cocktail name and an alcohol warning.

Service instructions

Place stacks of clear cups near the towers and hand guests a cup and a long-handled ladle. Instruct guests to ladle approximately 6–8 oz of cocktail into a cup. If serving over ice, fill cup 3/4 with crushed ice before ladling. Adjust portion to keep balanced servings (about 1.5–2 oz spirits per 8 oz serving).

Offer extra garnishes at the service station: lime wheels, orange wheels, maraschino cherries, and mint sprigs. Provide a small pitcher of extra club soda for guests who prefer a lighter drink or more fizz.

Monitor levels of liquid and ice; replenish chilled mixers, spirits, and ice as needed. Keep dispensers out of direct sun and maintain refrigeration for any spares.

Safety & cleanup

Label alcoholic dispensers clearly. Keep a separate non-alcoholic dispenser (mix equal parts orange and pineapple juice with club soda) if you expect non-drinkers. After event, drain remaining cocktails into sealed containers and refrigerate for up to 48 hours or discard. Clean and sanitize towers, spigots, and ladles per manufacturer instructions.
