Prepare Oreo crumb
Place Oreo cookies in a zip-top bag and crush with a rolling pin or pulse in a food processor until coarse crumbs form. Set aside in a small bowl.
Warm and crisp donuts
Preheat oven to 350°F (175°C). Slice each donut in half horizontally. Brush cut sides lightly with melted butter. Optionally sprinkle a little granulated sugar on the buttered side for extra crispness. Place donuts cut-side up on a baking sheet and warm in the oven for 6–8 minutes until slightly crisp and warmed through. Remove and set aside to cool 1–2 minutes.
Optional chocolate garnish
If using chocolate shavings, coarsely chop or shave the dark chocolate now and reserve for finishing.
Sauce & Finish
Make whipped cream (if not using store-bought)
Chill a medium bowl and beaters briefly. Pour chilled heavy cream into the bowl, add powdered sugar and vanilla extract. Whip on medium-high speed until soft peaks form, about 2–3 minutes. Do not overwhip. Transfer whipped cream to a piping bag or keep in bowl.
Warm chocolate sauce (optional)
Warm chocolate sauce or hot fudge briefly in a small microwave-safe bowl for 10–15 seconds or until pourable but not hot. Stir to smooth.
Assemble each Chocolate Donut Sundae
Place one warmed donut bottom on a dessert plate (cut side up). Add one large scoop of vanilla ice cream on top of the donut. Drizzle about 3/4 tablespoon of chocolate sauce over the ice cream. Sprinkle 2 tablespoons of Oreo crumb evenly over the ice cream and donut. Top with another warmed donut half (cut side down) to create a donut sandwich, or leave open-faced if preferred.
Finish and serve
Add a second smaller scoop of vanilla ice cream beside or on top of the stacked donut if desired. Pipe or dollop a generous spoonful of whipped cream on each sundae. Drizzle remaining chocolate sauce and hot fudge (if using) over the whipped cream and donut stack. Sprinkle reserved chocolate shavings over the top, add a pinch of sea salt if using, and finish with a maraschino cherry. Serve immediately while donuts are still slightly warm.
