Combine mayonnaise, ketchup, Dijon mustard, smoked paprika, pickle juice, hot sauce (if using), salt, and black pepper in a small bowl. Whisk until smooth. Taste and adjust seasoning. Refrigerate while you prepare the burgers.

Prep meat

Place the ground beef in a large bowl. Add grated onion, minced garlic, Worcestershire sauce, kosher salt, and freshly ground black pepper. Gently mix with your hands or a fork until combined — do not overwork the meat to avoid tough patties.

Form patties

Divide the mixture into 4 equal portions (about 6 oz each). Gently form each portion into a loose ball, then flatten into a patty about 3/4 inch thick. Make a shallow dimple in the center of each patty with your thumb to help them cook flat and evenly.

Rest patties

Place formed patties on a tray and refrigerate for 15–20 minutes to help them hold their shape while you preheat the cooking surface.

Cook patties

Heat a heavy skillet or cast-iron pan over medium-high heat until very hot (about 3–5 minutes). Add 1 tsp neutral oil and swirl to coat. Place patties in the pan without crowding; you may need to cook in two batches. Cook for 3–4 minutes on the first side without moving until a deep brown crust forms. Flip and immediately top each patty with a slice of cheddar cheese. Continue cooking 3–4 minutes for medium (internal temperature ~160°F/71°C) or to desired doneness. Remove patties to a plate and let rest for 3 minutes.

Bacon + Buns + Toppings

Cook bacon

While patties chill, cook the bacon in a skillet over medium heat until crisp, 6–10 minutes, turning as needed. Transfer cooked bacon to a paper towel-lined plate to drain.

Toast buns

Melt butter in a clean skillet over medium heat. Split the buns and toast cut sides in the butter until golden and lightly crisp, about 1–2 minutes. Remove from heat.

Assemble: Spread about 1 tbsp of Beast Sauce on the bottom bun. Place a lettuce leaf, a tomato slice, then the cheeseburger patty. Top the patty with two slices of bacon, a few pickle slices and some red onion. Add additional Beast Sauce to the top bun and close the burger. Repeat for remaining burgers.

Serve hot with your choice of fries or sides.
