Remove the Etna Rosso bottle from storage. This style is best served slightly below room temperature: target 14–16°C (57–61°F). If the bottle is at cellar temperature (~12–14°C) you can serve directly; if it is warmer, place in the refrigerator for 20–30 minutes to bring it down; if too cold, let it warm at room temperature for 15–20 minutes.

Inspect and chill

Using a waiter’s corkscrew, cut the foil cleanly below the lip, wipe the top of the bottle with a clean cloth, and slowly remove the cork. Inspect the cork and wine for any off-odors or faults (the Etna Rosso should show notes of red fruit, floral herbs, volcanic minerality).

Open the bottle

If the bottle is young or you want to highlight aromatics, decant the wine gently: pour the wine slowly into a decanter in one steady stream, stopping if sediment appears (rare for Nicosia Etna Rosso 2019). Allow to breathe for 20–40 minutes to open aromas and soften tannins. If short on time, simply pour directly into glasses and allow to sit 10–15 minutes.

Decant (recommended)

Choose large-bowl red wine glasses (Burgundy style) to concentrate aromas and allow the wine to breathe in the glass.

Select glassware

Pour 120–150 ml (about 4–5 oz) of Etna Rosso per glass. Hold the bottle at the base, place thumb on punt for control, and pour steadily. Fill to the widest part of the bowl to maximize aroma extraction without overfilling.

Pouring

Set a small glass of still water beside each guest to cleanse the palate between sips and courses. Keep remaining bottle in a decanter or briefly return to a cool place if serving across a long meal.

Serve water

Suggest guests look for aromas of red cherry, raspberry, wild strawberry, hints of Sicilian herbs and floral notes, with a stony volcanic minerality and moderate tannins. Pair with roasted or braised meats, tomato-based pasta, grilled vegetables, mushroom dishes, or aged cheeses.
