Seltzer Base

Method

Lavender Simple Syrup (make ahead, yields ~4 fl oz)

Combine

In a small saucepan combine 1/2 cup (120 ml) water, 1/2 cup (100 g) granulated sugar, and 2 tablespoons dried culinary lavender (or 3–4 fresh lavender sprigs).

Simmer

Bring mixture to a gentle simmer over medium-low heat, stirring until sugar dissolves. Do not boil vigorously; simmer for 3–4 minutes to infuse the lavender.

Steep & Strain

Remove from heat and let steep for 20–30 minutes for a stronger floral note. Strain through a fine-mesh sieve into a clean container, pressing solids to extract liquid. Cool completely before using. Store refrigerated for up to 2 weeks.

Assemble the Seltzer

Prepare functional additives

Measure your cannabinoid and lion's mane components precisely. If using tinctures: calculate volumes needed to deliver 3 mg THC, 10 mg CBD, and 500 mg lion's mane. If using isolates/powders for any component, dissolve them first in the optional 1 tsp MCT oil to assist dispersion. If using oil-based tinctures, gently warm (warm water bath) to lower viscosity so they mix more readily.

Add to glass

Place 6 ice cubes into a tall glass or highball. Pour in elderflower cordial (1/2 fl oz) and lavender simple syrup (1/4 fl oz) over the ice, then add 1/4 fl oz fresh lemon juice.

Incorporate actives

Add the measured 3 mg THC, 10 mg CBD, and 500 mg lion's mane (already diluted in the small amount of MCT oil or tincture) into the glass. If you used oil, stir vigorously for 20–30 seconds to create the best possible emulsion; a small handheld frother for 5–10 seconds helps distribute oil-based tinctures in the seltzer.

Top with seltzer

Slowly pour 12 fl oz chilled carbonated water down the side of the glass to preserve effervescence. Stir gently once with a long spoon (one slow up-and-down stir) to combine flavors without flattening the seltzer.

Garnish & Serve

Twist a lemon wheel over the drink to release oils, drop it in, and add a fresh lavender sprig. Serve immediately. Note: because oil-based actives can separate over time, give the drink a gentle stir before each sip if it sits.
