The Mojito Refresher takes a classic favorite and gives it a creative twist. Lemon, pineapple, cucumber, and mint come together in a medley of fresh flavors, sweetened with agave and topped with the gentle spice of ginger ale.

Mojito Base
Prepare cucumber puree
Place the diced cucumber in a blender or food processor and blitz until smooth, about 20–30 seconds. If desired, strain through a fine mesh sieve into a small bowl to remove pulp for a smoother drink (optional).
Muddle mint
In a large pitcher, add the mint leaves and agave nectar. Gently muddle with a wooden spoon or muddler 8–10 times — press to release oils but avoid shredding the leaves to prevent bitterness.
Combine juices and rum
Add the fresh lemon juice, pineapple juice, and white rum (if using) to the muddled mint and agave. Stir to combine until agave is fully dissolved, about 20 seconds.
Finish & Serve
Top with ginger ale
Top with ginger ale and adjust sweetness/brightness
Pour the ginger ale over the pitcher contents and gently fold to combine, preserving some effervescence. Taste and adjust: add up to 1 tablespoon more agave if you prefer sweeter, or a squeeze of lemon if you prefer brighter acidity.

Serve immediately while fizzy. For a non-alcoholic version, omit rum and increase ginger ale by 1 cup and pineapple juice by 1/4 cup.
