Citrus & Fruit Base

Sweetener & Acid Balance

Method

Prep

1

Chill and measure

Place the grapefruit soda and optional soda water in the refrigerator so they are well chilled. Measure and prepare fresh juices and guava puree. Have a highball or Collins glass chilled or filled with ice ready.

2

If using fresh grapefruit, juice and strain to remove large pulp. If guava puree is thick, thin with 1–2 tsp water so it mixes smoothly.

Build the Mocktail

3

Fill a cocktail shaker halfway with ice.

4

Add the fresh pink grapefruit juice (3 oz), pineapple juice (1.5 oz), cranberry juice (1 oz), guava puree (0.75 oz), simple syrup (0.5 tbs), and fresh lime juice (0.5 oz) to the shaker.

5

Shake vigorously for 8–10 seconds to chill, dilute slightly, and integrate the guava with the other juices.

6

Fill the prepared highball or Collins glass with fresh ice (about 1 cup).

7

Strain the shaken juice mixture into the glass over the ice, using a fine strainer if you used fresh grapefruit to catch pulp.

Finish & Garnish

8

Top gently with 3 oz chilled Lady Bird Grapefruit Soda. If you prefer a lighter sweetness and more fizz, add 1 oz chilled soda water and reduce the soda to 2 oz.

9

Give the drink one gentle stir with a bar spoon (1–2 turns) to combine without flattening the soda.

10

Garnish with a grapefruit wheel or twist and a small pineapple wedge or leaf on the rim. Optionally express a grapefruit peel over the drink to release aromatics, then discard or drop the twist in.

11

Serve immediately with a straw or stirrer.
