Elk filling
Prep and sweat aromatics
Heat a large skillet over medium heat. Add 1 tablespoon olive oil. When oil shimmers, add the diced onion and a pinch of salt. Cook, stirring occasionally, until the onion is soft and translucent, about 4–5 minutes. Add the minced garlic and cook 30–45 seconds until fragrant.
Brown the elk
Increase heat to medium-high. Add the ground elk to the skillet, breaking it up with a spatula. Cook until it loses its pink color and starts to brown, about 4–6 minutes. Avoid over-crowding — if meat steams, increase heat slightly so it gets a good sear.
Season and simmer
Stir in chili powder, ground cumin, smoked paprika, dried oregano, salt, and black pepper. Mix well so spices coat the meat. Add the tomato paste and cook 1 minute to deepen flavor. Pour in 1/2 cup beef or elk stock and stir, scraping any browned bits from the bottom of the pan. Reduce heat to medium-low and simmer uncovered for 4–6 minutes until the liquid mostly reduces and the filling is saucy but not wet.
Finish with lime
Remove from heat and stir in 1 tablespoon fresh lime juice. Taste and adjust seasoning with more salt, pepper, or lime if needed. Keep warm while you prepare tortillas and toppings.
Quick crema (optional)
Whisk together 1/2 cup sour cream or Greek yogurt, 1 teaspoon mayonnaise, 1 teaspoon lime juice, 1/2 teaspoon hot sauce (or minced chipotle), and 1/8 teaspoon salt in a small bowl until smooth. Adjust heat or lime to taste. Refrigerate until ready to use.

Assemble tacos
Divide the elk filling evenly among the 8 tortillas (about 2 ounces filling per tortilla). Top each with a small handful of thinly sliced red cabbage, a sprinkle of diced red onion, chopped cilantro, crumbled cotija cheese, and jalapeño slices if using. Drizzle with the quick crema or add lime wedges to squeeze over the tacos.
Serve
Serve immediately while warm. Offer extra lime wedges, hot sauce, and extra cilantro alongside.
