In a large brew kettle, heat 3 gallons of water to 165°F (74°C). Add the Pale Malt, Crystal Malt, and Caramel Malt. Stir well and maintain the temperature at 150°F (65°C) for 60 minutes.

Mashing

After mashing, sparge with 2 gallons of water at 170°F (77°C) to collect the wort.

Sparging

Bring the wort to a boil. Once boiling, add the Cascade hops and boil for 60 minutes. Add the Willamette hops in the last 15 minutes.

Boiling

Cool the wort quickly to 70°F (21°C) using a wort chiller or an ice bath.

Cooling

Transfer the cooled wort to a sanitized fermentation vessel. Pitch the yeast and seal the vessel with an airlock. Allow to ferment for 1-2 weeks at 65-70°F (18-21°C).

Fermentation

Once fermentation is complete, transfer the beer to a bottling bucket. Add priming sugar to carbonate, then bottle the beer using sanitized bottles and caps.

Bottling

Let the bottles condition for 2 weeks at room temperature, then chill, serve, and enjoy your Southern Appalachian Copperhead Amber!
