In a large pot, heat 3 gallons of water to about 165°F (74°C). Add the Pale, Caramel, and Crystal malts to the water and hold at 152°F (67°C) for 60 minutes.

Mashing

After 60 minutes, sparge with additional 2 gallons of hot water to rinse the grains, collecting the wort in a brew kettle.

Sparging

Bring the wort to a boil, then add the Cascade hops. Boil for 60 minutes, adding the Willamette hops with 15 minutes remaining in the boil.

Boiling

After boiling, cool the wort quickly using a wort chiller or an ice bath until it reaches around 70°F (21°C).

Cooling

Transfer the cooled wort to a sanitized fermenter and add the yeast. Seal with an airlock and ferment at around 68°F (20°C) for 1-2 weeks.

Fermentation

Once fermentation is complete, dissolve the priming sugar in 2 cups of boiling water. Add this to the bottling bucket, then transfer the beer to the bucket, mixing gently. Bottle and cap the beer.

Bottling

Let the bottles condition at room temperature for 1-2 weeks, then chill and enjoy your Southern Appalachian Copperhead Amber!
