1. Prepare the Peach Base

In a blender, combine the chopped peaches, water, and granulated sugar. Blend until smooth. Pour the mixture into a pot over medium heat and bring to a simmer, stirring occasionally until the sugar has dissolved. Remove from heat and let it cool.

2. Fermentation Stage

Once the peach mixture has cooled to room temperature, add the lemon juice and active dry yeast. Stir well to combine. Cover the pot with a clean cloth and let it sit in a warm place for 1-2 days to ferment until bubbly.

3. Combine with Beer

After fermentation, strain the peach mixture through a fine-mesh sieve into a large bowl to remove solids. Add the peach puree and mix well. Gradually stir in the sour beer until fully combined.

4. Chill and Serve

Transfer the mixture to a pitcher and refrigerate for at least 2 hours to chill. Serve in glasses over ice, garnished with fresh peach slices.
