Commonwealth Papi Chulo IPA

Garlic mayo is a creamy sauce blending mayonnaise with minced garlic, often used to enhance various dishes.

In a large pot, heat 19 liters of water to approximately 70°C (158°F). Add the pale malt, flaked wheat, and caramel malt. Stir well and maintain the temperature between 65-68°C (149-154°F) for 60 minutes.

Mash Process

After the mash, sparge with enough water to collect around 25 liters of wort in the brew kettle.

Sparging

Bring the wort to a boil. Once boiling, add Citra hops, followed by Mosaic and Simcoe hops at different intervals (Citra at 60 minutes, Mosaic at 15 minutes, and Simcoe at 5 minutes).

Boiling

Cool the wort rapidly to 20°C (68°F) using a wort chiller.

Cooling

Transfer the cooled wort to a fermenter and pitch the yeast. Seal and allow fermentation to occur for 1-2 weeks at a stable temperature.

Fermentation

After fermentation, add the dry hops (Citra and Mosaic) into the fermenter and let it sit for an additional 3-5 days.

Dry Hopping

Dissolve corn sugar in a small amount of water and add to the bottling bucket. Transfer the beer and bottle it, sealing each bottle tightly.

Bottling

Allow the bottles to carbonate at room temperature for about 1-2 weeks before chilling and enjoying.
