Allow the wine to undergo malolactic fermentation, which will soften the acidity and enhance the mouthfeel. This typically takes 4-6 weeks.

Malolactic Fermentation

Age the wine in oak barrels for 6-12 months to develop complexity and integrate flavors. Monitor the aging process regularly.

Aging

Once aging is complete, filter the wine and transfer it into sterilized bottles. Seal the bottles with corks and label them appropriately.

Bottling

After bottling, allow the wine to rest for a few months before tasting. Serve at a temperature of 16-18°C and enjoy the aromatic profile of plums, cherries, blackberries, blueberries, and chocolate.
