Method
Prep
Rinse and sort
Inspect the raw green peanuts and remove any shriveled, moldy, or damaged shells. Rinse the peanuts thoroughly under cold running water to remove dirt and debris.
Measure salt solution
Measure 12 cups of water and set aside. Combine salt and sugar with a cup or two of the water in a heatproof container to help dissolve if desired.
Cook
Bring to a boil
Place a large heavy-bottom pot (6–8 quart) on the stove. Add the rinsed peanuts, 12 cups water, 1 cup kosher salt, 2 tablespoons sugar, smashed garlic, bay leaves, crushed red pepper flakes, and Old Bay or Cajun seasoning. If using beer, add it now and reduce the water by 1 cup (so total liquid remains about 12 cups).
Initial boil
Bring the pot to a rapid boil over high heat, uncovered. Once boiling, reduce heat to maintain a gentle rolling boil. Stir once to dissolve remaining salt and distribute aromatics.
Simmer for tenderness
Partially cover the pot and simmer gently, maintaining a low boil, for 2 to 3 hours. Stir every 20–30 minutes and check the water level—add additional hot water as needed to keep peanuts covered. Start checking for doneness after 90 minutes: remove a peanut, let cool briefly, and taste. The texture should be tender through the shell and creamy inside. Cooking time varies with peanut size and age of the nuts.
Adjust seasoning and finish cooking
If peanuts taste underseasoned after testing, add up to another 1/4 to 1/2 cup salt, stir to dissolve, and continue simmering until desired texture is reached. For stronger flavor, simmer an additional 30 minutes to 1 hour.
Rest & Serve

For saltier, more evenly seasoned peanuts, remove the pot from heat and let the peanuts steep in the hot brine for 30 minutes to 2 hours with the lid on. They will continue to absorb flavor as they cool.
Cool and drain
Using a slotted spoon, transfer peanuts to a colander and drain. Discard aromatics (bay leaves and garlic if desired). If you prefer them hot, serve immediately; if you prefer warm or room temperature, let them rest until they reach desired temperature.
Storage
Store cooled boiled peanuts in an airtight container in the refrigerator for up to 5 days. To reheat, simmer in a pot of salted water for 10–15 minutes or microwave in a covered dish with a little of the original brine for 2–4 minutes.
