Shrimp Preparation

Poach the Shrimp

In a large pot, bring 4 cups of water to a boil. Add 1 tsp of salt and the lemon slices.

Cook the Shrimp

Add the shrimp to the boiling water, reduce heat to medium, and cook for about 3-4 minutes or until the shrimp turn pink and opaque.

Cool the Shrimp

Remove the shrimp from the pot and immediately place them in a bowl of ice water to stop the cooking process. Drain and set aside.

Ajo Blanco Preparation

Prepare the Ajo Blanco

In a blender, combine blanched almonds, minced garlic, cubed bread, and 2 cups of water.

Blend the Mixture

Blend until smooth. While blending, slowly add 1 tbs of olive oil and 1 tbs of white wine vinegar until well incorporated.

Season the Soup

Add 1 tsp of salt and pepper to taste, then blend again briefly to combine. Transfer to a bowl and chill in the refrigerator.

Salad Assembly

Combine Ingredients

In a large salad bowl, combine the sliced endive, segmented oranges, poached shrimp, and chopped smoked almonds.

Add Horseradish

Drizzle the grated horseradish over the salad mixture.

Serve with Ajo Blanco

Serve the shrimp salad alongside a bowl of chilled ajo blanco for dipping.
