    Combine Base Ingredients

    In a large pot, combine the hard cider, pilsner beer, whiskey, bourbon chai, and lemon juice. Stir gently to mix.

    Add Spices

    Add the cinnamon sticks, ground cinnamon, cloves, star anise, and nutmeg into the pot with the base ingredients.

Heating

    Heat the Mixture

    Place the pot on the stove over medium heat. Allow the mixture to warm gradually, stirring occasionally to prevent burning. Do not let it boil.

    Simmer

    Once the mixture is heated through, reduce the heat to low and let it simmer for about 20 minutes. This will allow the flavors to meld together.

Serving

    Strain and Serve

    After simmering, strain the wassail through a fine mesh sieve into heatproof mugs or cups to remove the spices.

    Serve warm, garnished with an additional cinnamon stick if desired, and enjoy!
