Cooking the Agave

Fermentation
Mashing
After cooking, mash the agave to release the juices, which will be collected in a fermentation vessel.
Adding Wild Yeast
Add 100 g of wild yeast to the collected agave juice and mix thoroughly. Cover the vessel and let it ferment for 5-7 days at room temperature.
Distillation
First Distillation
Transfer the fermented agave juice to a pot still and distill at low heat to separate the alcohol from the solids.
