    Prepare the Remoulade

    In a mixing bowl, combine mayonnaise, ketchup, chili powder, and lemon juice. Mix well until fully combined. Set aside in the refrigerator to chill.

    Prepare the Oysters

    Shuck the fresh oysters and place them in a bowl. Pat dry with paper towels to remove excess moisture.

    Prepare the Breading Station

    In one bowl, place the all-purpose flour. In a second bowl, whisk together the eggs and milk. In a third bowl, place the cornmeal.

    Bread the Oysters

    Coat each oyster in flour, dip into the egg mixture, and then coat with cornmeal. Set aside on a platter.

    Fry the Oysters

    In a large skillet, heat olive oil over medium-high heat. Once hot, carefully add the breaded oysters and fry until golden brown, about 2-3 minutes per side. Remove and drain on paper towels.

    Cook the Smoked Sausage

    In the same skillet, add the smoked sausage and cook over medium heat until browned and heated through, about 5-7 minutes. Remove from heat.

    Prepare the Fennel

    Thinly slice the fennel bulb and set aside.

    Assemble the Toast

    Toast the brioche slices in the skillet until golden brown. Spread a generous amount of the tomato chili remoulade on each slice. Top with fried oysters, cooked smoked sausage, fennel slices, and a handful of red watercress.

    Serve

    Serve the fried oyster toast immediately while warm, garnished with additional watercress if desired.
