Preparing the Pork Belly

Marinate the Pork

In a bowl, whisk together soy sauce, brown sugar, minced garlic, grated ginger, sesame oil, and gochujang. Add the pork belly to the marinade and let it sit for at least 2 hours or overnight in the fridge.

Cook the Pork

Preheat the oven to 300°F (150°C). Place the marinated pork belly on a baking tray and cover with foil. Roast for about 3 hours until tender. Remove from the oven, let it cool slightly, and shred the pork.

Preparing the Pickled Apples

Make the Pickle

In a bowl, mix apple cider vinegar, sugar, and salt until dissolved. Add the julienned apples and let them sit for at least 30 minutes to pickle.

Assembling the Bao Buns

Warm the Bao Buns

Steam or microwave the bao buns according to package instructions until warm.

Fill the Bao Buns

Stuff each bao bun with shredded pork belly, a handful of crispy onions, a few slices of pickled apples, and garnish with green onions.
